Samuel Smith's Organic Chocolate Stout

Full body; roasted barley flavor; fruity notes from the Samuel Smith yeast strain support lush chocolate aroma, taste & finish.

 

Innovators in Certified Organic beers, Samuel Smith began to ship the first organic beers to the US in the mid-1990s. Organic Cider and Organic fruit beers followed starting in 2007, and after many months of test brews & intensive tasting Organic Chocolate Stout was released in September, 2012. A note about the label: the term “Theobroma cacao” that appears on the label is the scientific name for the cacao tree, and the illustration is of the pod from this tree, source of chocolate.

 

Serving Suggestion:

 

Great with a bowl of mixed nuts, with sharp cheeses, or with a classic molé sauce entrée. For dessert, try with complementary white, milk or dark chocolate; hazelnut biscotti; or chocolate mousse. Contrast with citrus crème caramel or vanilla ice cream. A glass of Organic Chocolate Stout is a treat with an addition of 10% Lindemans Framboise lambic. Serve at 50 °F.

Samuel Smith's Pure Brewed Organic Lager

Bright straw-gold color; medium body. Pure barley malt flavor and herbal hops in perfect balance. Clean and crisp, with brilliant conditioning.

 

Lightly kilned organic lager malt grown in the UK is the main ingredient, with a substantial addition of organic UK Vienna malt. Samuel Smith’s has begun to source organic hops in England; some of the organic hops used in the recipe come from New Zealand. Certified Organic by the USDA-accredited UK Soil Association.

 

Serving Suggestion:

 

As an aperitif, or with Quiche Lorraine, Crab Louis, poached salmon, or grilled halibut. Serve in traditional Samuel Smith tulip glass.

Samuel Smith's Imperial Stout

 

Deep black color; rich, deep flavors of chocolate, roasted barley, and ale fruitiness with hop bitterness in balance: a big yet still elegant ale. Beautiful, long finish – a complex blend of malt, hops, alcohol and yeast.

 

Russian imperial stout was originally brewed in Great Britain to satisfy the Czarist courts, who were great connoisseurs of Champagne, caviar and the art of the table. Because it was transported across the freezing Baltic, Russian imperial stout was brewed with a high level of alcohol.

 

Serving Suggestion:

 

Espresso, Stilton and walnuts, New York cheesecake, steak au poivre, caviar, Oysters Rockefeller, chocolate Baked Alaska. Easily hold its own in the company of cigars. Serve in a brandy snifter at 60 °F.

 

Samuel Smith's India Ale

 

A restrained maltiness and an emphasis on the aroma and flavor of hops from England’s finest farms: floral, herbal hops show in the aroma and finish, but bitterness is balanced, refined and elegant.

 

In the late 18th and early 19th centuries there was a considerable trade in beer to India. Leaving the India Docks in London, ships would sail around the Cape of Good Hope through the Indian Ocean to Bombay and beyond, a three-to four-month trip. Highly hopped pale beers brewed to withstand the trip became known as “IPA,” India Pale Ale.

 

Serving Suggestion:

 

Green chili and lime pickle, mulligatawny soup, pork with vinegar and garlic, chicken with a roasted coconut sauce, fish on a bed of potatoes, onions and tomato masala, prawns curry and duck risotto. Serve in nonik pint glasses.

Samuel Smith's Nut Brown Ale

 

The walnut or hazelnut notes in Nut Brown Ale come from dark malts and from fermentation in Yorkshire Squares – no nuts are used in the recipe! Dry, medium-bodied; the Sam Smith ale yeast strain gives a fruity note to the finish.

 

Brown ale is a specialty of the North of England, and a very early beer style – it is mentioned in literature in the 16th century. Judicious amounts of dark malt give brown ales brilliant dark-amber color and deep flavors that stop short of roastiness.

 

Serving Suggestion:

 

Stilton cheese, grouse and roasted game hen, barbecued duck, pepper steak; spicy food, paella, stir-fry, teriyaki, Thai food, Chinese food, creamy chicken and pineapple curry. Serve at 50-55 °F.

 

 

 

Oatmeal Stout

Samuel Smith's Organic Apple Cider

 

Cider has a long tradition in the UK. Ciders are refreshing, clean, and festive; they are also high in natural antioxidants. Samuel Smith’s Organic Cider is UK Soils Association & USDA Certified Organic and naturally gluten-free.

 

Cider fits in well with beer culture. It has an alcohol content similar to many beers, like beer it’s carbonated for a sparkle, and it can be found at most every good beer store or beer bar.

 

Apple juice used to produce cider contains a mix of apple varieties selected to balance fresh apple flavor with tartness, acidity, and sweetness. Samuel Smith’s uses a wine yeast strain to ferment their cider, providing a clean finish and allowing pure apple flavor to shine through.

Serving Suggestion:

 

Cream soups, rich dishes, or salad with vinaigrette dressing. Wonderful to clear the palate when served with concentrated or spicy foods; a classic companion to pork dishes.

Apricots contribute to a stunning fruit beer: the ripe, aromatic bouquet supports a sweet, summery flavor with just a suggestion of stone-fruit tartness. Samuel Smith’s Organic Apricot Ale is rich and full-bodied; the color is a glowing hazy orange.

 

Samuel Smith’s Organic Fruit Beers are brewed and fermented at Melbourn Bros. Brewery in Stamford; then blended, conditioned and packaged at Samuel Smith’s Old Brewery in Tadcaster; they are Certified Organic by the USDA-accredited UK Soil Association.

 

While there are older breweries in England, it would be safe to say that few are so little changed as this gem at Stamford, which has stood in the center of this beautifully preserved market community since 1825. From the antique grist mill to the ancient copper vessels, Melbourn Bros. remains today, a working brewery which blends the traditions of the ancient craft with that of the early industrial revolution. Closed in the 1970s, restoration with respect for the historical brewing equipment was begun by Samuel Smith’s in the 1990s.

 

Before Samuel Smith’s earned organic certification for Melbourn Bros. Brewery in 2008, Apricot Ale was their top-selling beer. The search to find Certified Organic apricots took some time, but Samuel Smith’s Organic Apricot Ale was finally introduced to the US in February 2012.

 

Serving Suggestion:

 

Try with curries or Moroccan chicken; rice pilaf; or couscous. A wonderful pairing with fruit salad – whether it contains apricots or not. Try with vanilla ice cream or custard for dessert.

Samuel Smith's Organic Pale Ale

 

A classic malt-accented, copper-colored pale ale in which subtle fruity esters from the Samuel Smith yeast strain interact with caramel flavors – from organic crystal malt – and fresh hops.

 

Wider availability of organic malts has made it possible for Samuel Smith’s to produce a classic pale ale from all-organic ingredients. Developed in 2011 and 2012 after many test batches and tasting sessions; replaced Sam Smith’s Organic Ale.

 

Serving Suggestion:

 

Dungeness crab salad, free range herbed chicken, hummus, smoked salmon and masala. Serve in traditional Samuel Smith nonik.

 

 

 

Samuel Smith's Organic Perry

Dry, sparkling pear cider with clear pale straw colour, smooth body, crisp but rich flavour of ripe pears, and the appealing aroma of a summer pear orchard. The cold fermentation with a wine yeast allows for the delicate pear aroma to shine, in this refreshing, thirst-quenching pear cider. Samuel Smith’s Organic Perry is naturally gluten-free and USDA Certified Organic.
